Homemade granola

A crunchy, golden granola - refined sugar free.

There’s something about homemade granola that instantly makes a morning more elevated.

Toasted oats, cinnamon and crunchy nuts & seeds, yum. Actually tastes better than most store bought versions and is so versatile! Just pick whatever you feel like eating that week or adjust the ingredients to support your cycle.

This recipe is naturally sweetened, customizable, and also perfect for meal prep. I love making a big batch for the week and pairing it with coconut yoghurt, on fruit, or just plain as a little snack.

I like to meal prep this and store it in a ziplock or Tupperware.

Ingredients

  • 250g rolled oats

  • 80g Almonds, roughly chopped. (substitute with any other nuts you like)

  • 60g Pecan nuts

  • 30g Pumpkin seeds

  • 2 tablespoons of chia or flaxseeds

  • 2 teaspoon cinnamon

  • dash of sea salt

  • fresh vanilla (to taste)

Wet Ingredients

  • 2-3 tablespoons maple syrup

  • 50ml melted coconut oil

  • 2 tablespoons almond or cashew butter

Optional Add-Ins

  • Dark chocolate chunks

  • Coconut flakes

  • Dried cherries or cranberries

  • Vanilla or chocolate protein powder

Instructions

Preheat the oven

Preheat your oven to 160°C (320°F) using conventional heat or an Airfryer.

Mix the dry ingredients

In a large bowl, combine the oats, nuts, seeds, cinnamon and a dash of sea salt.

Add the wet ingredients

In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla, and nut butter until it’s smooth.

Pour the mixture into the bowl with dry ingredients and stir until everything is coated.

→ sometimes I use gloves to really be able to mix everything well. (Also good when you’re low on time)

Bake

Spread the granola onto a baking tray lined with baking paper

Bake for 15-20 min, stirring half way until it’s golden. (I check the granola after 5-7 minutes depending on ingredients used)

Tips

  • For chunkier granola, press it down before baking and avoid stirring it too much.

  • If you’re adding chocolate chunks or dried fruit, add once it’s completely cooled off.

  • For extra clusters, use slightly more nut butter.

Serving Ideas

  • with coconut yoghurt & compote

  • As crunchy topping for baked apples or pears

  • As topping for Acai bowls / frozen fruit & mix
